In lecture notes there is a picture that contains Mut H, Mut L and MutS. I know that Mut L is the linker between the two, and Mut H cuts the unmethylated mutation, but what does Mut S do?

The MutS protein is what is referred to as a lesion sensor, which is a fancy way of saying it recognizes a problem in your DNA. Specifically, it recognizes the mismatch, and calls the other members of the mismatch repair system into action.
