Is the formation of a liposome necessarily energy favorable? Or is it just favorable because it protects the hydrophobic areas?

Interesting question. It's not that a liposome is so great, it's really just that a liposome finally hides all the hydrophobic groups. A good demonstration of this is the experiment described in class where the purified lipids were allowed to "plug" the hole in the divider and form a lipid bilayer we could study. If you'll recall, the lipids didn't bother to form a liposome and plug the hole with that liposome; they simply assembled in a manner that hid their hydrophobic regions.
