I was re-listening to the lecture and heard Prof. Mehrtens mention mono-unsaturated fatty acids. What is the difference between that and just a regular unsaturated fatty acid?

Unsaturated fatty acids include mono- as well as poly-unsaturated fatty acids. Mono-unsaturated fatty acids have only one unsaturated carbon (referring to the presence of a double-bond) in the carbon chain, or backbone. Poly-unsaturated fatty acids have more than one unsaturated carbon in the backbone.
