What is meant by the fact that enzymes do not change the equilibrium of reactions? I do not understand what the equilibrium of a reaction is referring to.

The equlibrium of a reaction is reached when the relative concentrations of substrate and product no longer change. This doesn't necessarily mean 50/50, as many biological reactions proceed far to one side before they reach equilibrium.
