Can condensation and hydrolysis reactions be considered as examples of anabolism and catabolism, respectively?


Yes.  Catabolism involves breaking down
larger molecules into smaller ones and releasing energy,
which is happening in hydrolysis reactions. Anabolism
involves building larger molecules from smaller ones, which
is what is occurring in condensation reactions.
