What would happen if an important cell in the body such as nerve cells was accidentally exposed to a drug such as Vincristine? I figure since the axons and dendrites are just MT extensions of the cytoplasm; the cell might lose its functionality.

Since vincristine targets actively dividing cells, it probably wouldn't get into a nerve cell in the first place. But if it did, interesting enough, it would affect the MTs in the cell body, but not the axon or dendrites. Remember, those MTs have to be stabilized in order to keep the shape of the cytoplasmic extension, so reducing the amount of free tubulin in an axon wouldn't induce polymerization of the axon MTs.
