I think you said that some macromolecules can begin to be degraded in the late endosome, but none will be completely degraded until the lysosome is fully created. Is this because the pH of the late endosome is not yet 5, or is there some other reason why macromolecules cannot be completely degrated in the late endosome?

Your reason is correct. At the pH of a late endosome, some of the acid hydrolases are partially active and begin to work, but won't be fully active until the pH of the functional lysosome is reached.
