I'm a little confused about the varying pH levels in the cell.. I understand that going from early endosome > late endosome > lysosome the pH becomes more acidic, but are there other pH levels we should be aware of? Are these the only places in the cell we should know about?

The pH level is important to the function of a lysosome, so that is why we are focused on it. You also have already been told about the small pH difference in the mitochondria. Whenever there is a pH difference that is important we will point that out when discussing the function of the organelle.
